Breakfast Quinoa

Quinoa for breakfast??!!

I know – it sounds weird.

But, I love this hearty breakfast, especially in winter

Ingredients

  • Quinoa

  • Vanilla

  • Unsweetened Almond Milk (or coconut milk)

Optional Ingredients/Toppings:

  • Berries
  • Peanut Butter
  • Almond Butter
  • Bananas
  • Nuts
  • Sweet Potato

 

Instructions

  1. Cook Quinoa per package instructions (I usually add a teaspoon or so of vanilla when cooking)
  2. Assemble ½ cup of quinoa, ½ cup almond or coconut milk and heat
  3. Topping with nuts or berries.
  4. Try adding in a spoonful of peanut butter or even sweet potato!
