Banana Pancakes

So, you might think you have to give up pancakes when you give up sugar and flour – NOT SO!

I LOVE pancakes, so I make these on the weekends for a special treat.

Ingredients (makes 2-3 pancakes)

  • 1 very ripe banana
  • 1 egg
  • 1 heaping tablespoon of (sugar free) almond butter

 

Instructions

 

For banana chunks – mix by hand

Otherwise mix with a bullet or other blender

 

Cook!

 

Serve with fresh sliced banana or just eat with a little butter!
