Quinoa Black Bean Salad


I love when I can find a really good meatless recipe for my family. This one hits the spot.

Most similar recipes use enchilada sauce but this version doesn't to keep it sugar/flour free.

Ingredients

  • 1 ½ c quinoa

  • 1 ¼ c water

  • 1 can of fire-roasted tomatoes (don’t drain)

  • 1 can of black beans

  • 1 can of corn

  • Lime juice from 1 lime

  • Spice mix of equal parts chili powder, salt, pepper, garlic powder, cayenne pepper

 

Instructions

Cook the quinoa, water and can of tomatoes together in a skillet. 

 

Bring to a boil and then reduce to a simmer for about 15 minutes (or quinoa is done). 

 

Stir in black beans, corn, lime juice and spices.  

 

Serve in a bowl with your favorite toppings (salsa, sour cream, avocado, etc.)
